Any type of stew recipe is my favorite because not only is it super easy, but the house smells so lovely while it cooks! It reminds me of being a kid in grandma’s kitchen! 

This Irish Beef Stew Recipe

You can tailor the ingredients listed to fit what you have in your fridge and pantry!

Ingredients – Irish Beef Stew

  • 1 ½-2 ½ pounds stew meat
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ cup yellow onion
  • 6 slices bacon, chopped
  • ¼ cup all-purpose flour
  • 2 tablespoons butter
  • 1 (11.2 oz) bottle Guinness
  • 4 tablespoons tomato paste
  • 4 cups beef stock 
  • 3 carrots or parsnips, chopped
  • 2 stalks celery, chopped
  • 2 bay leaves
  • 1 teaspoon thyme
  • 3 cups potatoes, peeled and chopped
  • ½ tablespoon Worcestershire sauce
  • Salt and pepper to taste

Instructions – Irish Beef Stew

 

Step 1

In a dutch oven cook bacon over a medium high heat until desired crispness, remove and set aside

Step 2

Season beef with salt and pepper

Add olive oil to dutch oven and brown the beef, remove and set aside.

Kids have fun with watching for the onions to be done! Space them a safe distance from the stove and they can tell you once the onions are translucent!
Step 4

Add butter and onions, cook until onions are soft and translucent, 2-3 minutes.

Making a roux sounds a lot more fancy and complicated than it is! It’s basically flour and butter or oil!
Step 5

Add in flour and whisk to make a roux, cook for 1 minute.

Pour in Guinness and whisk until there are no more lumps.

Add tomato paste, beef stock, carrots or parsnips, Worcestershire sauce, celery, bay leaves and thyme, stir to combine.

Bring to a boil, then reduce to low, cover and simmer for up to 2 hours, or until sauce has thickened to a loose gravy and vegetables are fork tender.

Taste and add salt and pepper as needed, remove bay leaves and enjoy.

Notes

You may use chicken broth in place of beef. The chicken broth will mask the taste of the Guinness more.

Is Irish Beef Stew Gluten Free? 

You have to use a gluten free beer, in order to make this Irish beef stew recipe gluten free. 

Also, use a gluten free all-purpose flour. 

Check your labels on the Worcestershire sauce that you use. There are some gluten free brands, but not all are free of gluten–so be careful!

I would also check the ingredients on the beef stock, as well as all other processed ingredients.
