Honey and walnut porridge loaf


The weather here today is awful!

It’s grey and rainy so we are stuck in the house.

We decided to do some baking as, bad mum as I am, we haven’t baked with the kids for ages.  I didn’t have much in the cupboard, we have no flour (Dam you lock down panic buyers) so we got creative with what we had.  We ended up making this honey and walnut porridge loaf and it was a big hit with the kids (and me, I’ve eaten way too much of it!)

In this recipe I used honey as it’s what we had in but originally I had wanted to use maple syrup.  If you try this recipe and are giving it to a child under 1 year old substitute the honey for maple syrup as honey isn’t safe for babies.

  • 300g oats (blitzed to form a flour consistency
  • 300ml milk
  • juice of 1/2 lemon
  • a handful of walnuts, crushed
  • 2 tbsp honey (or maple syrup)
  • Add the lemon juice to the milk to sour
  • Mix the flour and walnuts in a bowl
  • Add the honey to the bowl
  • Add the milk a bit at a time, mixing to form a dough.  (It shouldn’t be too sticky)
  • Lightly flour a loaf tin and transfer the dough into the tin
  • Bake in a preheated oven at 180°c for 40 minutes
  • Drizzle with a few more crushed walnuts and honey then serve!

My kids loved this as a snack but you could have it as a breakfast.

It would be great for baby led weaning as long as you crush the nuts so they are really fine, you could blitz in a food processor to make sure there are no large chunks.  You would also need to substitute the honey for maple syrup to make this recipe baby safe.
