Marble Iced Valentine’s Day Cookies


These Marble Iced Valentine’s Day Cookies are amazing! So simple and delightful.

You know I love Valentine’s Day. So I realized this morning that I didn’t have a special Valentine’s Day outfit for Rider! I do have some short-sleeved onesies with hearts, and some red pants, but it’s not the same. I pretty much dress him in zipper footie pajamas 98% of the time. For one, outfits without built in feet may require socks, and we all know that baby socks only stay on 2% of the time. And it’s too much work to use shirts or onesies with pants. Work, work, work. So I’ve been looking for a good Valentine footie option and finally found one in his size on my Target app today. Valentine’s Day is not canceled! It sure won’t be if you make these AMAZING cookies.

Marble Iced Valentine’s Day Cookies:

What You Need:

Cookies
1 cup unsalted butter, softened
1 cup granulated sugar
½ teaspoon salt
2 large eggs, room temperature
1 ½ tsp vanilla extract
3 ½ cups all-purpose flour, divided

Icing
3 cups confectioners sugar
4-5 Tbsp milk
4-5 Tbsp corn syrup
Gel food coloring

Prep Time: 15 minutes
Chill Time: 1 Hour
Cook Time: 15 minutes
Total Time: About 1 ½ hours
Yield: About 24 cookies, depending on cookie cutter size

What You Do:

1 – In a large bowl, cream together the butter and sugar with an electric mixer on medium speed.

2 – Add the eggs, vanilla, and salt and continue blending until thoroughly combined.

3 – And then, slowly add the flour, mixing just until combined.

4 – Cover the dough and place in the refrigerator for one hour.

5 – While the dough is chilling, preheat the oven to 350 degrees and line a baking sheet with parchment paper.

6 – Remove dough from the refrigerator and roll out onto a floured surface about a half of an inch thick and cut into desired shapes.

7 – Place shapes onto a baking sheet lined with parchment paper, and then bake for 10-12 minutes or until the cookies are set.

8 – Meanwhile, prepare the icing by combining the confectioners sugar, milk and corn syrup in a small bowl. Add more or less milk to adjust consistency.

9 – Squeeze a small amount of food coloring into the icing and use a toothpick to drag the color across the surface.

10 – Dip each cookie into the icing, allowing access to drip off. Place on a plate or cooking rack and allow the icing to set; about one hour.

Cooking Notes:

Don’t overbake the cookies. If they are golden brown, you overcooked them. They are done when they are set and no longer shiny, so don’t wait for the edges to turn.
