No-Bake Baileys and Berries Choc Ripple Cake


There’s nothing quite like the addition of Baileys Irish Cream to any recipe to have you saying oh HELLO CHRISTMAS, am I right? Without further ado, we take the classic choc ripple cake and give it a scrumptious Baileys edge. OH HOLY NIGHT YUM.

If you’re yet to make a Choc Ripple cake – DO IT. It’s the ultimate quick, no-bake dessert hack and a complete crowd-pleaser. Though you can whip it up in under 10 minutes, it does need at least six hours for it to set (preferably overnight) to get that nice spongey texture. BUT that also means you can make it in advance, so you’re still #winning.

Baileys is delicious but of course, if you have children also partaking in this dessert – don’t add the Baileys at all. Or perhaps keep a small jug of Baileys to the side for adults to pour on their plates. Just saying we don’t need to encourage alcohol consumption in minors, is all.

Note: You can make this dessert as big as you like. Double the recipe for more guests!

The easiest dessert EVER!

Baileys and Berries Choc Ripple Cake recipe

Serves 10 (depending on how generous you slice!)

Ingredients

  • 1 pack of 250g Arnott’s Choc Ripple biscuits
  • 2 teaspoons icing sugar
  • 1 teaspoon vanilla bean paste or extract
  • ¼ cup Baileys Irish Cream, plus extra for serving
  • 600ml thickened cream
  • 1 Flake chocolate bar
  • Berries of your choice (we’ve used strawberries and raspberries but cherries would also be great!)

Method

1. Using electric beaters, whip together the cream, sugar and vanilla until soft peaks form. Continue beating as you trickle in the Baileys, whipping until firm peaks appear.

2. Spread a little cream on to your serving plate to help glue the biscuits in place. Spread one biscuit with a heaped teaspoon of cream and sandwich it together with another biscuit. Continue until you have a stack of six biscuits.

3. Place the stack of biscuits on its side on the serving plate. Repeat for the remaining biscuits, forming a log shape. Spread the remaining cream over the biscuits to cover completely.

4. Cover the plate loosely with foil and let it set in the fridge overnight.

5. Before serving, drizzle the cake with extra Baileys Irish Cream and crumbled Flake chocolate bar.

6. Pile berries generously on top and enjoy your Baileys and berries Choc Ripple cake!
